As for the taste of foie gras, you have purchased a raw product - not a ready-to-eat item. It requires proper preparation and seasoning, which ultimately determines the final taste and experience.

The Hackel back I had very pretty pearly eggs. What’s sad, they didn’t pop. It was more like a spread still really good. But I really wanted to experience that popping.

This product is packed with a moisture-absorbent pad to maintain product quality and freshness during shipping and storage. The net weight stated on the label reflects the weight of the product as packed, inclusive of any liquid released during thawing that is absorbed by the pad. If the pad is removed after thawing, the measured weight may be lower than the stated net weight. This is normal and does not indicate a shortage in the product you received.
Since this product is not manufactured by OLMA Caviar, we have no control over the packaging process. The manufacturer's information is printed on the label, and you are welcome to contact them directly regarding production matters.
On our end, we have verified that the product information on the label is accurate. If you are not satisfied with your purchase, you are welcome to return it for a full refund.

I bought caviar from 2 other vendors in…
I bought caviar from 2 other vendors in the same week that I bought the Olma caviar for a caviar tasting.The other two vendor's caviar expire mid May and the one I ordered from Olma expires next week. I can only come to the conclusion that the one from Olma is not as fresh.

The difference in expiration dates actually reflects the type of packaging rather than freshness. Our caviar in metal tins has a refrigerated shelf life of 4 weeks due to minimal processing, while our glass jars are pasteurized and keep for up to 6 months. The other vendors you purchased from may be selling pasteurized products, which would explain the longer shelf life.
If you'd like to extend the life of a metal tin, it can be frozen for up to a year without affecting quality.
We hope this clears things up.
Shipment was missing Crème Fraiche
The order containing caviar arrived, but they forgot to ship two containers of crème fraiche. Rather than ship me the missing items, I was provided a refund. Crème Fraiche is not available anywhere near where I live, and I would have rather Olma had shipped replacements instead of a refund, which was easier for them, but not for me.

I am disappointed this did not work…
I am disappointed this did not work out. There is no way shipping cavair with so little cold packets to maintain proper 27-35 temperature is acceptable even if just for overnight shipping. Your representatives have stated that you ship all over US and those containers guarantees adequate cold to preserve food safety. My order did not have any cold inside temperature actually was warmer than outside temperature. With this type of shipping someone is going to get sick. Please note realize your company does have polices that employees are suppose to follow. But unfortunately this does not happen all the time. Please note sales on Amazon reviews have complained about receiving your products warm also. Company shipped from NYC to North Carolina overnight. There is no way those packs were put into shipping container cold. You are stating company policy not what actually happened. If you keep denying, basically calling me a liar, the problem will never be corrected.I have no motivation for not telling the truth. i am only trying to help improve your business service. Calling me a liar is an attempt to cover YOUR mistake. Would you like me to post review from Amazon on this format. Or are they liars also? it was just a mistake on YOUR part, accept this and try to fix problem. I do appreciate refund, after one of your employees was giving me the run around. Again sorry this didn't work out. Please insure ALL shipments have adequate cold packs installed.

As we explained earlier, we ship hundreds of perishable orders daily across the U.S. Our insulated packaging and ice packs are specifically designed and tested to maintain safe temperatures for up to 72 hours in transit, including overnight shipments. Food safety is extremely important to us, and we do not cut corners on packaging.
That said, we understand your concern and take it seriously. Since there was no delay with this delivery, it seems highly unlikely that the ice packs were completely melted; nevertheless, your order has been fully refunded.
We truly appreciate your business and regret that this shipment did not meet expectations. We hope you’ll consider giving us another opportunity to provide the quality experience we’re known for.
